Ingredients :


  • 4 cups riced cauliflower (roughly 1/2 large head of cauliflower)
  • 1/2 cup cooked, mashed sweet potato
  • 2 eggs *to make eggless, use flax egg recipe below in the notes
  • 3 tablespoons buffalo sauce (or more depending on your heat level)
  • 1/2 cup finely diced yellow onion
  • 1 cup + 2 tbsp almond flour
  • 1/2 teaspoon salt (or more if desired)


Instructions :


  1. Preheat oven to 375
  2. Combine the uncooked, riced cauliflower with the mashed sweet potato, eggs, buffalo sauce, yellow onion, almond flour, and salt. Mix well to incorporate the mashed sweet potato evenly
  3. Line a baking sheet with parchment paper and scoop out roughly 1/2 cup of the meatless burger mixture. Gently mold into a patty roughly 1-inch thick then place on the baking sheet – the mixture will be very wet, so handle with care. Patties can also be flattened after placing on the parchment paper
  4. Place baking sheet into the oven and bake for 35-40 minutes, until patties are cooked throughout and hold together
  5. Optional: For a slightly crispy top, keep the patties in the oven and turn the broiler on high. Broil for 4 minutes – watch the burgers so they don’t burn
