Ingredients :

  • 1.5 lbs Chicken Tenders
  • 1 cup Almond Flour
  • 3 Eggs
  • 1.5 cups Pork Rind Breadcrumbs
  • 2 Tbls Hot Sauce
  • 2 tsp Salt divided
  • 2 Tbls Chili Powder divided
  • 1 tsp Cayenne
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Paprika
  • Avocado Oil Spray

Instructions :

  1. Preheat oven to 425' and line a baking sheet with parchment paper
  2. Get 3 dishes out
  3. In the first dish add the almond flour with 1 tsp of the salt and 1 Tbls of the chili powder (mix to combine)
  4. In the second dish, whisk the eggs with the hot sauce
  5. In the third dish, add the pork rind bread crumbs, remaining 1 tsp of salt, remaining 1 Tbls of chili powder, cayenne, garlic powder and paprika (mix to combine)

  7. Then it will get dipped in the egg mixture and finally coated in the pork rind breadcrumb mixture
  8. Once the chicken tender is coated, lay it on the prepared baking sheet
  9. Continue until all the chicken tenders are coated and lined on the baking sheet
  10. Spray the avocado oil spray over the top and bake in the preheated oven for 15-17 minutes or until chicken is completely cooked through
