- 2 very ripe bananas
- 1/3 cup almond milk (or any plant-based milk)
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 small handful walnuts - chopped
- 1/4 cup chocolate - chopped (make sure it's vegan)
- 4 tablespoons peanut butter - chilled
Instructions :
- Preheat the oven to 350°F/180°C.
- Peel the bananas and mash them in a mixing bowl. Add the almond milk and stir to combine.
- Add the flour and baking powder and stir to combine until it's a thick batter. Now add about 3/4 of the walnuts and chocolate (save a few to add them to the cookies later). And combine.
- Use an ice cream scoop to scoop equally sized blobs of batter onto a baking tray lined with parchment paper. Add pieces of the chilled peanut butter onto each cookie. And top with the remaining chocolate and walnuts.
- Bake the cookies in the oven for about 10-15 minutes (until slightly brown on the edges).
- Let them cool off and enjoy!
