Hello there everybody! I trust you folks had a decent week. I'm headed toward New Orleans for the end of the week for Jazz Fest. Alright fine...I'm truly going for doughnuts, however Jazz Fest is a pleasant reward. Be that as it may, I have never been to New Orleans so I am truly energized! (Also, I hear District makes some really stunning doughnuts).

In any case, before I head out, I needed to share this Chocolate Chip Waffle Cookie formula. These treats are marvelous on the grounds that you really make them in a waffle iron. No stove required! The batter is overly simple to make and the treats themselves "prepare" in 2-3 minutes!

INGREDIENTS

WAFFLE COOKIES

  • 2 sticks unsalted butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup + 1 tablespoon brown sugar
  • 2 cups flour
  • 3 eggs
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup mini chocolate chips

GLAZE

  • 1 1/2 cups powdered sugar
  • 1 1/2 teaspoons imitation vanilla
  • 3-4 tablespoons milk
  • Mini chocolate chips

DIRECTIONS

For the glaze:

  1. In a medium bowl, combine powdered sugar, imitation vanilla and milk.
  2. Whisk until smooth. Set aside.

For the cookies:

  1. Preheat your waffle iron to high.
  2. In a stand mixer fitted with a paddle attachment, combine butter and sugars on high speed until light and fluffy.
  3. Turn the mixer down to medium and add eggs and vanilla.
  4. On the mixer's lowest speed, add flour, salt, and baking powder. Mix until just combined.
  5. Stir in chocolate chips.
  6. Spray waffle iron with non-stick spray. Using a small ice cream scoop or spoon, put about 1 1/2 tablespoons of dough onto the waffle iron. Close the iron and let the dough cook for 2-4 minutes or until golden brown.
  7. Take the cookies off the iron and dip them into the glaze while still warm.
  8. Set on a wire rack and sprinkle on chocolate chips.
