Our lives have been rotating around crosscountry and lacrosse at our home. The two of them have practice twice during the week and afterward we have recreations throughout the day on Saturday. Yesterday was our last game and I feel a lot more opportunity! Having children engaged with occupied games can be extreme. This is the reason I want to at present have a generous dinner for my family and soup is the ideal thing!
Since I am fixated on everything tuscan garlic… (genuinely you must attempt this Creamy Tuscan Garlic Chicken), I realized that a soup variant of this mainstream dish must be made.
You are going to adore how brisk and simple this soup is to make! You will love the velvety soup base and everything inside is so scrumptious. Tortellini, chicken, diced tomatoes, spinach, and white beans. Everything meets up consummately and it is SO flavorful!

Ingredients :
- 2 Tablespoons butter
- 1 small white onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 28 ounce can diced tomatoes
- 1 15 ounce can white beans, drained and rinsed
- 1 cup heavy cream
- ¼ cup grated parmesan cheese
- 1 Tablespoon italian seasoning
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 cups cooked and shredded chicken (I used rotisserie)
- 9 ounce refrigerated tortellini
- 2 cups spinach
Instructions:
- In a large pot over medium heat, heat up the butter. Add onion and garlic and cook until tender. Add chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, italian seasoning, salt and pepper. Bring to a simmer.
- Add the chicken, tortellini, and spinach. Let simmer for 10 minutes to thicken up and for the tortellini to cook.
